Fam, it's soup season! Here's an easy and delicious Chicken Sopas recipe that you need to try. A classic and comforting Filipino dish that will surely warm and comfort your soul. It has chicken and vegetables like carrots, celery and cabbage in a milky and savory broth. I used left over rotisserie chicken to make my life easier and cut cooking time by 30%. Hope you enjoy!
Preheat a large and deep stock pot or wok.
Add avocado oil and butter, and melt.
Add garlic and onions. Sauté over medium-high heat for a minute or until fragrant.
Add sausage and sauté for 2 minutes.
Add shredded rotisserie chicken, carrots, celery and pasta. Mix until combined.
Add water, chicken paste and white pepper. Cover. Bring to a boil.
Reduce heat to low and cook for 10 minutes.
Add evaporated milk and cabbage. Stir and cook for another minute. Taste to see if you need to adjust the seasonings. Enjoy while it's hot.
-You can also use whole milk, heavy cream, or coconut cream.
-You can also use chicken stock, but omit the chicken paste or bullion.
-Red hot dogs is typically used for this recipe, but I don't like how it makes the soup slightly pink, and so I used sausages instead. But if you want to use red hot dogs, add them at the end with the cabbage.
-Fish sauce adds umami to the dish, but you can just use salt if you're allergic.
