The original CHICKEN INASAL from Bacolod, Philippines is char-grilled and doesn’t contain soy sauce in the marinade. One day, I’ll make the authentic version, but for now, I hope you enjoy my air fryer version. It smells so good and so delicious. Highly recommend eating with steamed white rice and dip in spicy soy sauce.

CHICKEN ANNATTO OIL
Add chicken skin (3 lb) to a preheated pan.
Let the fat render in low heat until it becomes crispy.
Add annato seeds (½ tsp), bay leaf (1 leaf), salt (⅛ tsp), and neutral oil (⅓ cup). Stir until the color turns into a deep orange.
Strain into a bowl. Set aside.
INASAL
Combine soy sauce (⅓ cup), vinegar (⅓ cup), calamansi juice (2 Tbsp), garlic (4 cloves), lemon grass (1 Tbsp), ginger (1 1-inch knob), brown sugar (1 Tbsp), black pepper (¼ tsp), and chicken annato oil (2 Tbsp) in a container. Add chicken (2 large) and massage marinade into the chicken. Let it marinate for at least 6 hours.
Place chicken in the air fryer basket and air fry at 390°F for 15 minutes.
Baste generously with the chicken annatto oil (2 Tbsp).
Air fry for another 10-15 minutes or until chicken is cooked all the way through.
Serve with steamed white rice, more chicken annato oil on top, and soy sauce with calamansi juice for dipping.

- If you’re unable to find chicken skin, use a neutral oil instead.
