Adobo is a popular way of cooking in the Philippines. It means to simmer or cook protein or vegetables in soy sauce, vinegar, garlic, dried bay leaves, and black peppercorns. That said, you can Adobo any meat and vegetables you prefer. Here’s my recipe for “Adobong Sitaw” or long beans with pork belly. It’s an easy dinner or lunch recipe that’s delicious with steamed white rice.

  1. Preheat a wok or cooking pan over medium-high heat.

  2. Add pork belly (½ lb) and let the fat render (A lot of fat will come out so cooking oil is not needed)

  3. Once fat has rendered, add garlic (4 cloves) and onions (½ small) and stir-fry until fragrant.

  4. Add water ( cup), soy sauce ( cup), vinegar ( cup), oyster sauce (1 Tbsp), and dried bay leaf and black pepper (¼ tsp).

  5. DO NOT touch it and let it simmer for 5 minutes before stirring.

  6. Cover, reduce heat to low, and simmer until pork is soft and tender. (This process took about 25 minutes)

  7. The meat should be tender and the sauce should be reduced.

  8. Add long beans (3 cups) and stir. Cover and cook to the desired doneness. I cooked it for 10 more minutes.

  9. Enjoy immediately and serve with steamed white rice and enjoy!
