Homemade sweet and garlicky SKINLESS PORK LONGGANISA. One of the best Filipino breakfasts you’ll ever try. Savory, garlicky, and a little sweet. It tastes a lot better than store-bought and it’s so easy to make.

Instructions
In a bowl, combine ground pork (1 lb), salt (2 tsp), pepper (1 tsp), paprika (1 Tbsp), cornstarch (1 Tbsp), brown sugar (½ cup), and garlic (8 cloves). Mix thoroughly and set aside.
Lay a plastic wrap on a flat surface. Spoon over 1/3 cup of the meat mixture, spread with fingers, roll, and twist the ends tightly.
I was able to make 8 pieces.
Store in the freezer until ready to use or in the fridge for at least an hour before cooking
Heat saute' pan over low heat, add 2 tbsp cooking oil (2 Tbsp), sear the longganisa for 1 minute on each side.
Add a little water, cover and let it steam on low heat for a couple of minutes until meat is cooked through.
The lonnganisa should be brown and caramelized. Serve with garlic fried rice and enjoy!

Notes
- Fat is flavor, so make sure the ground pork has at least 20% fat.
- Paprika gives a nice orange color that longganisa has. Use can use Annato powder, too.
- You have control over how much sugar and garlic you wanna put.
