  1. Add pork shoulder (1 ½ lb) without oil on a hot pan and render the fat. Let it brown on its own fat and set it aside.

  2. Spoon out half of the oil and add garlic (4 cloves), onions (1 medium), and sauté until fragrant over medium-high heat.

  3. Add tomatoes (1 large) and sauté for 1 minute.

  4. Add pork shoulder and season with salt ( to taste) and pepper ( to taste) and sauté and let the tomatoes melt for 5 minutes.

  5. Add hot water (4–5 cups). Cover and simmer on low for 40 minutes, or until meat is tender.

  6. Add tomato sauce (½ cup), pork and beans (1 can), and potatoes (1 large), and season with fish sauce ( to taste) to taste. Cook until the potatoes are half cooked.

  7. Add carrots (1 medium), green beans (1 bunch), saba banana (2) and cook until veggies are tender

  8. Lastly, add Bok choy (1 bunch) and cabbage (1 small) and cook for a few minutes or until they softened, and that's it!

  9. Serve with steamed white rice and enjoy!

Notes

  • You can use garbanzo beans instead of canned pork and beans
  • You can add sliced Chorizo, too. I just didn’t have any.
  • Saba banana is available at Asian supermarkets. But you can use regular ripe banana if you can’t find it.
