Make Chicken Sopas or Filipino Chicken Macaroni Soup with leftover Rotisserie Chicken. Warm, comforting and delicious soup on this cold weather.

HOW TO MAKE CHICKEN STOCK
Preheat oven to 400°F.
Place chicken bones with skin on a baking sheet and roast in the oven for 1 hour.
Add to a large soup pot then add hot water (7 cups)
Add bay leaves (3 leaves), cover and let it boil on medium heat for 1 hour.
Remove bones and you just made homemade chicken stock.
INSTRUCTIONS
Preheat a saute pan. Add cooking oil (2 Tbsp) and saute garlic (3 cloves) and onions (½ small) until fragrant over medium-high heat.
Add carrots (1 medium) and celery (2 stalks) and saute for a few minutes.
Transfer to the homemade chicken stock (6 ½ cups), add shredded chicken (3 cups), elbow macaroni (1 cup), water (2 cups), fish sauce (1 Tbsp) an stir.
Cover and cook over medium heat for 10 minutes.
Add evaporated milk (½ cup), white pepper (⅛ tsp), more fish sauce (1 Tbsp) if needed, cabbage (½ small) and red hod dogs (2). Wait til the cabbage is wilted and it's ready to serve.

- I added the red hot dogs last so it won’t “bleed” and leave a pink-ish color to the soup.
- Add as much water as you want and adjust fish sauce to your liking.
- Use boiling hot water to speed up the cooking time.
