Here’s my GINATAANG MAIS or Filipino Coconut and Corn Pudding recipe as requested. Super easy to make and so yummy!

Instructions
Remove corn kernels from the cobs (2 cobs) and set aside.
In a deep pot, combine naked cobs, water (2 cups), and coconut milk (¾ cup). Cover and bring to a boil. Turn heat down to low and let it simmer for 5 minutes.
Remove the cobs and add glutinous rice (½ cup), corn kernels, pandan extract (4 dashes) and stir. Cover and let it cook for 10 minutes. Keep heat on low.
Stir then add sugar (½ cup), coconut cream (¾ cup) and salt (1 pinch). Stir.
Cover and let it cook for 7-10 minutes.
Turn off heat and let it sit for 5 minutes. The longer it sits the thicker it gets.

- Pandan essence is optional but highly recommended to make it fragrant. It would even be better with fresh pandan 🍃
- The longer it sits, the thicker it gets. You can always add more water and sugar to adjust the texture and sweetness.
- You can use canned corn with liquid too. I was just feeling extra with fresh corn on the cob.
