TORTANG TALONG or Filipino Eggplant Omelette. A popular breakfast and lunch dish in the Phillipines and one of my favorite comfort foods. This is my basic Tortang Talong recipe.

TORTANG TALONG or Filipino Eggplant Omelette. A popular breakfast and lunch dish in the Phillipines and one of my favorite comfort foods.
This is my basic Tortang Talong recipe.

Instructions
Cook the eggplant (3 medium) until soft and wrinkly. You can either boil, steam, grill or broil them. Cooking time will depend on the size. I broiled mine on low for 15-20 minutes turning them over every 5 minutes.
Let it cool completely and peel the skin leaving the stem attached.
In a bowl, combine eggs (4), pepper (¼ tsp), fish sauce (½ tsp) and cornstarch (¼ tsp). Wisk until frothy.
Heat a large sauté pan to high heat. Once pan is hot add cooking oil (2 Tbsp). (A hot pan will prevent the torta from sticking)
Carefully lay the eggplant (3 medium)-egg mixture on the hot pan.
Spoon over more egg mixture in top.
Turn heat down to medium and continue to fry for 2-3 minutes on both sides until golden brown.
Drain on paper towel to soak excess oil.
Serve with steamed white rice and dipping sauces like banana ketchup and vinegar, soy sauce with crushed garlic. Enjoy!

- You can add salt instead of fish sauce.
- A little cornstarch makes the texture of the torta crispy.
