Filipino-style CARBONARA

Filipino-style CARBONARA is the 2nd most popular pasta dish in the Phillipines. I noticed it’s served in most restaurants and in all types of occasion back home. Creamy, salty, delicious and super satisfying! Oh, and it’s easy to make. 🇵🇭😁

Instructions
Cook spaghetti noodles (½ lb) according to packaging. Don't forget to add salt to the boiling water. Set it aside.
Add bacon strips (8 strips) to a pan. Turn heat to low and let it cook until crispy. Drain on paper towel and chop or cut into small pieces. (You'll end up with 1 cup of crispy bacon)
Remove the bacon grease (2 Tbsp) and leave 2 tbsp in the pan.
Over medium high heat, sauté garlic (4 cloves) and onions (½ small) until fragrant.
Add sliced mushrooms (6 large) and cook until they shrink. (Sauté for a minute if you're using canned mushrooms)
Add water (½ cup), mushroom powder (1 Tbsp) (you can also use chicken powder), 1/2 of the crispy bacon (8 strips) and black pepper ( to taste). Stir and scrape the bottom of the pan with a wooden spatula.
Let it simmer for 1 minute and add cooked spaghetti noodles and mozzarella cheese (½ cup) and mix until spaghetti is completely coated in sauce.
Turn off heat and let it sit in the pan for 5 minutes uncovered.
Serve with more crispy bacon and green onions on top. Enjoy!

- I didn’t add salt because cause the Mushroom powder had salt in it and the bacon was already salty.
- It’s my first time using Mushroom powder but you can use chicken powder instead.
- I used fresh sliced mushrooms but canned mushroom is often used in the recipe.
