You know what’s great for breakfast or brunch? Sarciadong Itlog. It’s basically a Filipino-twist on scrambled eggs. It has sauteed garlic, onions, lots of tomatoes, water, beaten eggs and seasoned with salt, black pepper and fish sauce to taste. It’s this perfectly simple, satisfying dish and flavorful. My mom used to make it for me all the time when I was a kid, and I love making it for my family and I on lazy Sundays.
Preheat your pan to medium-high heat.
Add cooking oil (1 Tbsp).
Add garlic (2 cloves) and onions (½ small). Saute until fragrant.
Add tomataoes (5) and saute'. Cook until they become soft and mushy.
Add water (⅓ cup). Bring to a boil.
Carefully add beaten eggs (4 large).
Season with salt (to taste), black pepper (to taste) and fish sauce (1 Tbsp).
Stir carefully until the eggs are fully cooked.
Taste if it needs more salt, pepper or fish sauce and if everything is to your liking then it's ready to serve.
Enjoy with steamed white rice or pandesal.
