You know what’s great for breakfast or brunch? Sarciadong Itlog. It’s basically a Filipino-twist on scrambled eggs. It has sauteed garlic, onions, lots of tomatoes, water, beaten eggs and seasoned with salt, black pepper and fish sauce to taste. It’s this perfectly simple, satisfying dish and flavorful. My mom used to make it for me all the time when I was a kid, and I love making it for my family and I on lazy Sundays.

Instructions
Preheat your pan to medium-high heat.
Add cooking oil (1 Tbsp).
Add garlic (2 cloves) and onions (½ small). Saute until fragrant.
Add tomataoes (5) and saute'. Cook until they become soft and mushy.
Add water (⅓ cup). Bring to a boil.
Carefully add beaten eggs (4 large).
Season with salt ( to taste), black pepper ( to taste) and fish sauce (1 Tbsp).
Stir carefully until the eggs are fully cooked.
Taste if it needs more salt, pepper or fish sauce and if everything is to your liking then it's ready to serve.
Enjoy with steamed white rice or pandesal.

INGREDIENTS and SUBSTITUTIONS:
- TOMATOES – The ingredient that makes this dish stand out. They add this sweetness and juiciness that balances out the savory flavor of the eggs. You can use any type of tomatoes you like-cherry tomatoes, beefsteak tomatoes even canned crushes tomatoe. I like using Roma tomatoes because it’s always on sale.
- GARLIC and ONIONS – These aromatics are the base of this dish. It makes it fragrant and add depth of flavor. I just love the smell of garlic and onions cooking together. No substitutions!
- FISH SAUCE – It’s the condiment that makes this dish taste amazing. I know what you’re thinking- “fish sauce in scrambled eggs?’ But trust me, it’s a game changer. It adds umami flavor that elevates the whole dish. I like to use good quality fish sauce like Red Boat (not sponsored) because of it’s pure ingredients. Give it a try and see the difference for yourself. However, if you’re allergic to fish sauce the use soy sauce instead.
- GREEN ONIONS – Optional but it they’re nice to have as a garnish sprinkled on top.
