Sinigang or Filipino Sour Soup was once voted “The Best Soup in the World” by Taste Atlas. A staple dish in Filipino households. It typically uses meat or seafood stewed with tomatoes, tamarind or tamarind packet mix, garlic and onions. It’s sour, savory, comforting, delicious and one of my favorite soups.

For this recipe, we are going to use thick cuts of pork belly but you can also use pork or beef ribs, whole shrimp with shell on, sliced of salmon, salmon belly or any types of firm fish. Also, feel free to add as much or less vegetables as you want.

  1. Preheat a large wok or soup pot. Add cooking oil (1 Tbsp). Add garlic (6 cloves) and onions (½ small) and saute over high heat for one minute.

  2. Add chunks of pork belly (2–3 lb). Season with black pepper (½ tsp) and fish sauce (2 Tbsp). Saute until its coated in seasonings. Let it sear and brown on both sides.

  3. Add tomatoes (2) and boiling hot water (5–6 cups). Cover. Reduced heat to low and cook until the pork is tender.

  4. Add taro (1 medium). Cover and cook until tender.

  5. This is optional but take a few cooked taro, place in a bowl with a little bit of the broth and mash with a fork then add it back into the pot and stir.

  6. Add Daikon radish (1 medium), green beans, eggplant (2 medium), okra (6 pieces) and stir. Cover and cook veggies to desired doneness.

  7. Add 1 whole packet of Tamarind soup mix (1 packet). Stir.

  8. Add water spinach (1 handful). Stir.

  9. Taste if it needs salt ( to taste) or fish sauce (2 Tbsp).

  10. Serve hot with steamed white rice and enjoy!
