It’s so simple yet so good! This “ulam” or breakfast, lunch, or dinner idea, SARCIADONG ITLOG with tomatoes or Filipino-style scrambed Eggs is my favorite way to eat eggs. It has “fish sauce” instead of salt that adds umami and also a little water to make the eggs fluffy.

Instructions

  1. Prepare the eggs. Crack eggs (4) in a bowl.

  2. Season with fish sauce (1 tsp), black pepper (¼ tsp), and sugar (½ tsp).

  3. Add a little water (1 Tbsp) and beat it with a fork.

  4. Heat a sauté pan on medium-high heat.

  5. Once the pan is hot, add cooking oil (2 Tbsp).

  6. Add garlic (2 cloves) and onions (¼ small) and saute until fragrant.

  7. Add tomato (1) and saute until it softened (3 minutes)

  8. Add beaten eggs. Turn heat down to low and stir until firm.

  9. Cook eggs to the desired doneness. Garnish with green onion and serve.

Notes

  • Use salt if you don’t have fish sauce
