Pancit or noodles is a staple dish at Holiday parties in the Philippines. It symbolizes long life in Filipino culture. Not sure if it’s true, but it’s a delicious nonetheless.

  1. On a preheated wok, Add 2 tbsp cooking oil and add shrimp (15 pieces). Season with salt ( to taste) and pepper ( to taste) for 3 minutes over high heat. Set aside.

  2. In the same wok, add 2 tbsp cooking oil, add garlic and onions and stir fry until fragrant.

  3. Add chicken thighs (2), season with salt ( to taste) and pepper ( to taste) and stir fry until cooked all the way through.

  4. Add carrots (1 medium) and snow peas (1 handful) and stir fry for 4 minutes or until carrots are al dente.

  5. Add celery (3 stalks) and cabbage (½ small) and stir fry until cabbage softens. Transfer to a plate.

  6. In the same wok and 1 tbsp cooking oil and stir fry squid balls (12 pieces) and kikiam (6 pieces) until brown. Transfer to a plate with the cooked chicken and veggies.

  7. Reduced heat down to low and in the same wok, add water (4 cups), soy sauce (4 Tbsp), oyster sauce (2 Tbsp) and chicken base (1 Tbsp). Stir.

  8. Add a whole package of Pancit Canton (5 cups)

  9. Gently mix the noodles until they absorb all the liquid.

  10. Add half of the cooked veggies and stir in with the noodles. Save other half as garnish or toppings on the Pancit.

  11. Serve with sliced Calamansi or lime and enjoy!
