Pancit or noodles is a staple dish at Holiday parties in the Philippines. It symbolizes long life in Filipino culture. Not sure if it’s true, but it’s a delicious nonetheless.

Instructions
- On a preheated wok, Add 2 tbsp cooking oil and add shrimp (15 pieces). Season with salt ( to taste) and pepper ( to taste) for 3 minutes over high heat. Set aside. 
- In the same wok, add 2 tbsp cooking oil, add garlic and onions and stir fry until fragrant. 
- Add chicken thighs (2), season with salt ( to taste) and pepper ( to taste) and stir fry until cooked all the way through. 
- Add carrots (1 medium) and snow peas (1 handful) and stir fry for 4 minutes or until carrots are al dente. 
- Add celery (3 stalks) and cabbage (½ small) and stir fry until cabbage softens. Transfer to a plate. 
- In the same wok and 1 tbsp cooking oil and stir fry squid balls (12 pieces) and kikiam (6 pieces) until brown. Transfer to a plate with the cooked chicken and veggies. 
- Reduced heat down to low and in the same wok, add water (4 cups), soy sauce (4 Tbsp), oyster sauce (2 Tbsp) and chicken base (1 Tbsp). Stir. 
- Add a whole package of Pancit Canton (5 cups) 
- Gently mix the noodles until they absorb all the liquid. 
- Add half of the cooked veggies and stir in with the noodles. Save other half as garnish or toppings on the Pancit. 
- Serve with sliced Calamansi or lime and enjoy!
