Filipino CHOP SUEY is underrated!!! Am I right? Welcome back to my new series UNDERRATED FILIPINO FOOD, where I’ll show you how to make unpopular yet amazing Filipino food.
Dish no.2 is CHOP SUEY, a Chinese-inspired dish consisting of a variety of vegetables and some protein like chicken and shrimp. Very simple to cook, healthy, and delicious!

Instructions
Combine everything together in a glass container. Stir and set aside.
Chop red bell pepper, carrots, cauliflower, cabbage, and broccoli into uniform pieces for even cooking. Set aside.
On a preheated wok, add cooking oil (2 Tbsp) and sauté carrots (1 medium), cauliflower (½ small), and broccoli (½ small) first because they cook longer. Sauté on high heat for 4 minutes.
Add snap peas (20 pieces), baby corn (4 oz), and red bell pepper (½) and sauté for 3 minutes.
Season with salt ( to taste) and black pepper ( to taste). Cover and cook for 2 minutes. Veggies are cooked dente.
Add cabbage (¼ medium), Stir, and set aside.
In the same wok, add cooking oil (2 Tbsp) and sauté' garlic (3 cloves) and onions (½ small) until fragrant.
Add chicken thighs (2 pieces). Sauté and season with salt ( to taste) and pepper ( to taste) to taste. Add fish balls (5 oz) and sauce. Stir. Cover and reduce heat to low and cook the chicken all the way through.
Stir in cooked veggies and cooked quail eggs (10 pieces). Coat in the sauce. Done.
Serve with steamed white rice. Enjoy!

- My mom sometimes adds chicken liver and gizzards.
- Season the veggies and chicken with salt and pepper.
- Use any veggies you have on hand.
- Quail eggs are optional.
