Make this for breakfast, lunch or dinner! Easy and delicious TORTANG CORNED BEEF or Filipino Corned Beef Omelette. I highly recommend using a Filipino brand corned beef because it taste better.
Preheat a saute pan over medium-high heat.
Add canned corned beef, break it up, and add garlic and onions. Sauté until onions soften and corned beef is heated all the way throgh
Add potatoes, saute and continue to cook until the potatoes are fully cooked.
Transfer to a wide bowl, and let it cool completely.
Once corned beef has cooled, add eggs and black pepper. Whisk with a form until combined.
I didn't season with salt because canned corned beef is already salty.
Preheat a sauté pan over medium high heat and add cooking oil.
Add 1/2 cup of the corned beef mixture and gently spread it. Cook for 2 minutes on both sides.
Drain on paper towel if needed.
