Make this for breakfast, lunch or dinner! Easy and delicious TORTANG CORNED BEEF or Filipino Corned Beef Omelette. I highly recommend using a Filipino brand corned beef because it taste better.

Instructions
Sauté garlic (3 cloves) and onion (½ small) over medium heat until fragrant.
Add canned corned beef (12 oz) and sauté until heated through.
Add diced potato (1 medium) and stir. Cover and cook for 5 minutes on medium heat until potatoes are fully cooked.
Set aside and let it cool.
Add 3 eggs (3) and season with black pepper (⅛ tsp) and mix with a fork.
Preheat a sauté pan over medium high heat. Add 2 tbsp cooking oil (2 Tbsp).
Add 1/2 cup of the corned beef mixture. Cook for 2 minutes on both sides.
Drain on paper towel if needed.
Serve immediately.
Best eaten with steamed white rice and dipping sauces like banana or tomato ketchup or soy sauce with crushed garlic and Thai red chili.

- I didn’t season with salt because the canned corned beef is salty enough for me.
- Make sandwiches using leftovers.
