FUN FACT: While growing up in the Philippines, my mom didn’t let me eat street foods unless she made it. But of course, I still did 😅 especially after school with my friends. There were a lot of street food vendors outside the gate of our school waiting for hungry students.
One of the most popular street foods is Kwek-kwek. Hard-boiled quail eggs coated in an orange batter then deep fried. Best eaten right away while it’s still hot with spiced vinegar and “Manong” sweet sauce.

Instructions
Cook quail eggs (20) in boiling water for 4 minutes. Transfer to an ice bath (bowl of water with ice) stop it from cooking further. Crack, peel and set aside.
Make the orange batter. Combine flour (⅓ cup), cornstarch (¼ cup), salt (¼ tsp), white pepper (¼ tsp) and baking powder (½ tsp). Whisk until combined.
Slowly add water (½ cup) and whisk until you get a thick and smooth consistency.
Add food coloring (6) and whisk until you get an orange color.
Dry the quail eggs with a paper towel and dredge it in a little bit or cornstarch to allow the batter to stick.
Coat in the batter and use a fork to pick it up and drop in hot vegetable oil and deep fry for 4 minutes until crispy.
Enjoy immediately with spiced vinegar and "Manong" sweet sauce.
