LUMPIANG GULAY, or Filipino Bean Sprouts Spring Rolls, are the best way to eat your vegetables. It's just as good and satisfying as Lumpiang Shanghai with meat. Crispy, earthy, savory, and satisfying. Back in the Philippines, they are typically sold as street food but can also be served as an appetizer on special occasions. Best enjoyed with spiced vinegar for dipping and make sure you let them cool before serving or else you'll burn your mouth.
Place cubed tofu (8 oz) in an air fryer basket and spray with cooking oil. Air fry at 400 °F for 12-15 minutes or until golden brown and crispy. Set aside.
You can also pan fry until golden brown and crispy.
In a preheated wok or sauté pan, add cooking oil (1 Tbsp). Add onions (½ small) and garlic (4 cloves) and saute until fragrant over medium-high heat. Add carrots (1 medium), green beans (1 small bunch), and sweet potatoes (1 medium)bell pepper and sauté until veggies are tender but not overcooked. Add cooked tofu, bean sprouts (12 oz) and cabbage (½ small)
Season with salt (1 tsp), pepper (¼ tsp), and oyster sauce (4 Tbsp) and sauté for a a few minutes just enough for the cabbage to soften but not soggy.
Transfer to a strainer with a plate underneath to catch excess liquids. Let it cool completely.
Lay a spring roll wrapper on a flat surface. Take a heaping 1/3 cup of vegetable filling and place it in the center. Roll and seal with cornstarch and water mixture. (see video)
Lay another spring roll wrapper and double wrap.
This will secure the lumpia.
Preheat cooking oil (2 cups) to 350 °F and pan-fry for 2-3 minutes on each side or until golden brown.
Fry in batches to avoid over crowding.
Drain over paper towel, and let it cool before serving and enjoy with a vinegar dipping sauce.
- Some variation adds a little bit of ground meat like pork or beef, but I kept this recipe vegetarian.
-Is double wrapping necessary? In my opinion, yes! Single wrap sometimes makes the lumpia greasy as the oil tends to seep inside the rolls when frying.
-It's normal to have some leftover vegetable filling.
