Instructions
Make shallow slices of the chicken (6–8 pieces) to make them cook faster.
Prep the marinade. In a container, combine soy sauce (½ cup), lime soda (⅓ cup), garlic cloves (5 cloves), banana ketchup (½ cup), brown sugar (¼ cup), and black pepper (½ tsp). Whisk until sugar is dissolved.
Add chicken and massage in the marinade. Cover and let it marinate for at least an hour or overnight for more flavor.
Preheat the oven at 425°F. Place chicken on a baking sheet.
Bake for 20 minutes.
While waiting, pour the remaining marinade in a sauce pan and recude by half on low heat. It will thicken like a bbq sauce.
Pour sauce over chicken on both sides and bake for another 20-25 minutes.
Pour more sauce before serving and enjoy with steamed white rice.
