Here’s a variation of Lumpia or Filipino Spring Rolls you might not know about. DYNAMITE LUMPIA is a popular street food in the Philippines. Traditionally made with long green chilis (“siling haba”) and stuffed with cheese and ground pork, wrapped in lumpia or spring roll wrapper, then deep fried. My version has large jalapenos, cream cheese, and mozarella cheese.
Slice jalapeño (10 large) in half lengthwise.
Scoop out the seeds and membrane with a teaspoon and set aside. Wear rubber or plastic gloves to protect your hands.
In a bowl, combine cream cheese (6 oz), mozarella cheese (1 cup), and garlic powder (1 tsp). Mix.
Lay a Lumpia wrapper or spring roll wrapper (10 pieces) on a flat surface in a diamond shape.
Wrap the stuffed Jalapeño (10 large) exposing the stem. (Watch video)
Roll tightly and seal with water and cornstarch mixture.
Heat 2-3 inches of vegetable oil in a deep pot to 350 °F.
Fry in batches until golden brown for 2-3 minutes, turning them over once.
Drain on paper towel.
Allow to completely cool before eating.
Serve with sweet chili sauce and enjoy!
