LONGANISA FRIED RICE

Longanisa is a staple breakfast food in Filipino households. It’s usually enjoyed on its own with egg and garlic rice. But what if we combine them into one dish and call it LONGANISA FRIED RICE with egg? One pan, easy to cook and delicious!

Instructions
Remove the casing of longanisa (10 oz)
Preheat a wok or pan. Add longanisa, break it up, and let it cook until its natural oil comes out. Stir-fry until cooked thoroughly over medium-high heat.
Add peas and carrots (½ cup) and stir-fry for a minute.
Make space in the middle of the pan, add beaten eggs (2), and let it cook until firm, then stir-fry everything together.
Add day-old cold rice (3–4 cups), break it up, and stir fry until everything is incorporated.
Season with salt ( to taste) and black pepper ( to taste) to taste.
Serve immediately.

- I didn’t add soy sauce to the recipe because the longanisa already has a lot of flavors.
- You can find a Filipino brand pork longanisa in any Asian supermarket at the frozen aisle.
- Add any other chopped veggies you prefer.
- I didn’t add any oil to pan because longanisa has a natural oil that will come out when it’s cooking.
