GINISANG MUNGGO with PORK (Filipino Sautéed Mung Beans) with Pork is a staple dish in Filipino households because it’s affordable, healthy, and easy to make. It’s also one of my comfort foods. I remember getting excited whenever my mom made it when I was a little kid. Served with steamed white rice and sometimes with chicharon or fried pork rinds. So good!

Ingredients (10)

Instructions

  1. Sauté onions (½ small) and garlic (3 cloves) over medium-high heat until fragrant.

  2. Add tomatoes (1) and saute for 1 minute and cook until tomato softens.

  3. Add pork shoulder, season with salt and black pepper. pork piecesand spread them around and let them brown a bit and cook for 5 minutes over medium heat.

  4. Add 7 cups of water

  5. Add munggo beans (1 cup). Saute. Cover. Bring to a boil. Reduce heat to low and let it cook for 50 minutes.

  6. Stir. By this time, the munggo beans absorbed some water and needed more time to cook, so add 1 more cup of water if needed.

  7. Season with fish sauce to taste. Cover and cook for 10-15 more minutes until munggo beans are fully cooked and the pork is tender.

  8. Add frozen spinach (1 cup) stir and cook for 2 more mins.

  9. Serve over steamed white rice. Enjoy!

Notes

  • You can also use tofu, fried fish, and shrimp if you don’t eat pork.
  • Have some patience. The munggo takes almost an hour to cook. You can soak it in water for an hour to speed the process, but you still have to make sure the pork is tender.
