GINISANG MUNGGO with PORK (Sauteed Mung Beans)

GINISANG MUNGGO with PORK or Filipino Sautéed Mung Beans with Pork is a staple dish in Filipino households because it’s affordable, healthy and easy to make. It’s also one of my comfort foods. I remember getting excited whenever my mom made it when I was a little kid. She sometimes garnished it with pork rinds. So good!

Instructions
Sauté onions (½ small) and garlic (3 cloves) over medium-high heat until fragrant.
Add tomatoes (1) and saute for 1 minute.
Add pork pieces (½ lb) and spread them around and let them brown a bit and cook for 5 minutes
Add 6 cups of water and pork cube (1 cube). Stir until the pork cube has dissolved.
Add munggo beans (1 cup). Stir. Cover and reduce heat to low and let it cook for 40 minutes.
Stir. By this time, the munggo beans absorbed some water and needed more time to cook, so add 2 more cups of water.
Cover and cook for 10-15 more minutes until munggo beans are fully cooked and the pork is tender.
Add frozen spinach (1 cup) stir and cook for 2 more mins.
Serve over steamed white rice. Enjoy!

- You can also use tofu, fried fish, and shrimp if you don’t eat pork.
- Have some patience. The munggo takes almost an hour to cook. You can soak it in water for an hour to speed the process, but you still have to make sure the pork is tender.
