Purple Yam Rice Pudding, a twist on the classic Champorado

UBE CHAMPORADO, a delicious twist on the classic Champorado of Filipino chocolate rice pudding. This version highlights the rich, earthy sweetness of ube, or purple yam, creating a vibrant purple breakfast or snack that's as beautiful as it is comforting. I like to top mine with evaporated milk, powdered milk, and shredded cheddar cheese.
Ube or purple yam is grown in the Philippines and other parts of Southeast Asia. Fresh ube isn't available in the US. But don't worry, frozen ube is an excellent alternative and is what many home cooks outside the Philippines use. You can find it at most Asian supermarkets in the frozen foods section. It's convenient, easy to use, and provides the authentic flavor and vibrant purple color that make ube desserts so special. Just thaw it before using.
Add water (4 cups) and coconut milk (1 ¾ cups) to a large wok or soup pot. Bring to a boil.
Reduce heat to low, add glutinous rice (1 cup), sugar (½ cup), grated ube (1 cup), and ube flavoring, (1 tsp) and stir. Cover and continue to cook the rice until the texture thickens.
Serve immediately and garnish with evaporated milk (1 Tbsp), powdered milk (1 Tbsp), and shredded cheddar cheese (½ cup).
- You can find frozen grated ube at most Asian supermarkets in the frozen food section.
-Some frozen grated ube are more purple in color than other due to food coloring. It depends on the brand. Read the ingredients.
