"Sukang Sawsawan" or homemade Filipino-style spiced vinegar, or "Sinamak" is a beloved dipping sauce that adds a balance of tanginess, sweetness, heat, and aroma to many Filipino dishes. It is especially popular with street food, grilled meats, fried seafood, and crispy snacks. There are many versions depending on the region in the Philippines, but this is what my mom taught me. Easy and simple to make.
Combine everything in a jar or container with lid and stir until sugar (1 Tbsp) is dissolved.
Let it sit for at least 24 hours before use. The longer you let it sit the better it will taste.
