Make this Ginataang Kalabasa at Sitaw (Filipino Calabaza or Winter Squash and Green Beans in Coconut Milk) if you wanna take a break from eating meat. It’s savory, creamy and naturally sweet and soo delicious over steamed white rice.

  1. Precook the calabaza (½ small). Wrap in paper towel and microwave for 4 to 5 minutes depending on the size. It will be 80% cooked and much easier to peel and cut.

  2. Peel and cut into large chunks and set aside.

  3. On a heated sauté pan, add cooking oil and sauté garlic (3 cloves), onions (½ small), and ginger (1 tsp) until fragrant.

  4. Add tomatoes and sauté for 1 minute and season with salt ( to taste) and black pepper ( to taste).

  5. Add green beans (2 cups), water (½ cup), chicken powder (1 tsp) and coconut milk (6 ¾ oz). Stir.

  6. Cover, reduce heat to low and let the green beans (2 cups) cook for 3 minutes.

  7. Season with fish sauce ( to taste), add calabaza and stir.

  8. Let it simmer until calabaza is fully cooked.

  9. Serve with steamed white rice and enjoy!

Notes

  • I like to precook the Calabaza in the microwave for easy peeling and slicing.
  • You can also add spinach, malunggay leaves or baby shrimp for more flavor.
