Did you know Filipinos have salads? Yes, we do! One of them is "Ensaladang Talbos ng Kamote". "Ensalada" means salad. "Talbos ng Kamote" means yam or sweet potato leaves or camote tops, and they are the edible leaves of a sweet potato plant.

My mom used to make it when I was a little kid as a side dish to any fried or grilled fish. It has blanched yam leaves, thinly sliced tomatoes, and red onions tossed in a simple dressing of cane vinegar, salt, and ground black pepper to taste. My mom also likes to add chopped salted egg or "bagoong isda" instead of salt if available. I hope you try it because you won't find it at any Filipino restaurants.
