Filipino Beef Tapa is a staple breakfast dish in Filipino cuisine. It is made of thinly sliced beef that’s marinated in soy sauce, vinegar or calamansi, garlic, a little sugar and salt, and lots of garlic. Traditionally, the beef is dried or cured to create a chewy, savory and slightly sweet flavor profile, but for this recipe, we are simply going to marinate the beef overnight.
It’s often served with garlic fried rice, fried for a hearty breakfast with a vinegar and chilis for dipping. It’s tender, garlicky and delicious!
In a large container with lid, add thinly sliced beef (1 lb), dark soy sauce (1 Tbsp), soy sauce (2 Tbsp), salt (⅛ tsp), black pepper (½ tsp), brown sugar (½ tsp), and garlic (8 cloves). Mix with your hand until everything is incorporated.
Cover and place in the fridge to marinate for at least an hour or overnight.
Preheat a wok or pan. Add cooking oil (1 tsp). Pan-fry the beef (1 lb) over high heat stirring occasionally until the water evaporates and a brown crust forms outside of the beef.
Serve with steamed white rice or garlic fried rice and fried egg and enjoy!
